The excitement is in the air... Just enjoying ramps in the springtime, for me, is what it is all about.
Ramps are a delicacy, and eating them is a long standing annual tradition in West Virginia. Ramps peep up out of the ground just after the winter snow melts. The ramp eating season lasts roughly from April through May. Ramps have a scent and taste similar to an onion. The “little stinkers” are typically served with ham, bacon, fried potatoes, brown beans and cornbread.
The downside of eating ramps is ramp breath. The mere scent of those who have recently eaten a mess of ramps has been known to clear a room. Ramp breath can only be described as a stench, a stench of a royal order. Garlic
breath can’t hold a candle to it. The only immunity is to have
eaten some yourself. While onion or garlic breath is usually gone by the next
day, ramp breath lingers on for up to two or three days. The smell also oozes out through the pores of your
skin.
Grab a handful while you can!
